Roasted Vegetables with Yogurt Sauce

If there is a more visually beautiful recipe than this, I don’t know! In addition to its appearance, it is super tasty and aromatic! It goes well with roasts, and for those who don’t eat meat, just a couscous to accompany it is wonderful!

Ingredients:
5 radishes cut into 4 parts;
1 carrot in medium pieces;
1 beetroot in medium pieces;
1/3 of cabotian pumpkin in medium pieces;
1/2 bunch of broccoli florets;
2 onions in medium pieces;
6 cloves of garlic;
1/2 cup (tea) of olive oil;
Salt and black pepper to taste.

Sauce:
1 pot of natural yogurt (170g);
3 tablespoons of chopped mint;
2 tablespoons of olive oil;
1 tablespoon of honey;
1/2 teaspoon of salt.

Cut pieces of aluminum foil and place a type of vegetable on each part (do not mix). Drizzle everything with olive oil and season with salt and pepper. Bake in a high, preheated oven for approximately 30 minutes or until the vegetables are soft.

Meanwhile, mix the sauce ingredients and set aside. Remove the vegetables from the oven, transfer to a platter and serve with the yogurt sauce.
