Banoffee is a hit in confectionery shops, not by chance, as it is a traditional English dessert and very tasty.

You may have heard of the pie Banoffee, one of influencer Jade Picon’s favorite desserts. With a different name, the pie is a huge hit in bakeries and is simply divine.

This pie, originally created in England in the 1970s, has a biscuit base and a filling of dulce de leche, banana and whipped cream topping. Its preparation is somewhat complex and time-consuming, since you make the base, if you want you can also make the dulce de leche and you still have to wait for it to freeze before serving. But all this time and work is rewarded by a delicious pie, perfect to serve as dessert.

Banoffee Recipe

Ingredients

  • 300g cornstarch biscuit
  • 150g unsalted butter
  • 1 can of condensed milk
  • 2 to 3 small bananas (check out 30 banana recipes)
  • 300 ml fresh cream
  • 40g of sugar
  • 10g instant coffee powder

Preparation mode

  1. First, let’s make the Banoffee base. Therefore, grind the cornstarch cookies in the processor or blender until it forms crumbs.
  2. Then, melt the butter and add it over the cookie crumbs and mix until it forms a dough.
  3. Now, in a 25-centimeter mold with a removable bottom, add this dough, pressing it with your fingertips over the bottom and sides. This will be the base of the pie.
  4. Once this is done, bake the pie base in the oven at 220°C for 20 minutes and set aside.
  5. Meanwhile, let’s go to the Banoffee filling, so cook the condensed milk under pressure for about 30 minutes until it turns into dulce de leche.
  6. Then, in a mixer, beat the cream with the sugar until it reaches the whipped cream stage.
  7. So, let’s move on to the assembly part. Start by making a layer of dulce de leche, then covering it with banana slices and then the whipped cream on top.
  8. Lastly, sprinkle instant coffee powder on top.
  9. Refrigerate the Banoffee for at least 2 hours before serving.

Banoffee preparation tips

  • Another way to make this pie is by not baking the dough. But in this case it only works if you don’t unmold the pie afterwards. So, when you line it with the cookie dough, just put it in the freezer until it freezes and then assemble the banoffee.
  • When finishing the Banoffee pie, if you don’t want to use instant coffee, you can sprinkle some chocolate powder or cinnamon on top, it works too.
  • In fact, a great tip for sprinkling the powder on top of the pie is with the help of a sieve.
  • In the case of our recipe, dulce de leche was made by cooking under pressure. However, you can use ready-made dulce de leche. But, ideally, it should be one of good quality and very firm.
