How to make the 4-ingredient functional pancake:

1 medium sweet potato cooked, mashed and passed through the juicer

1 whole organic free-range egg

1 clara

1 pinch of salt

Preparation:

Mix the ingredients, stirring well until it becomes a homogeneous dough. Then, heat a non-stick frying pan, add a drizzle of extra virgin olive oil or coconut oil and pour in part of the dough. Let it cook for a minute, until the surface starts to create small holes and then turn it over to cook and brown on the other side.

Repeat the process with the rest of the dough.
