Vegetable Cream with Leeks and Herbs

In this pleasant winter climate, this cream is perfect, not to mention that it is a great option for those who want to lose a few pounds as, in addition to being delicious, it is completely light. Okay, the appearance isn’t the most appetizing, but the flavor is incredible, trust me!

You can use whatever vegetables you have at home, and the leek is optional, but be sure to add the herbs as they add a special flavor. This quantity is for two people ok?


Start by sautéing 1/2 large chopped onion in olive oil. Add 2 chopped garlic cloves and sauté well, but without letting it brown.

Add the chopped vegetables. I used: 1 cassava, 2 potatoes, 1 carrot and 1/2 leek stalk (you don’t know how to use leeks, I’ll teach you here).

Add the herbs. I used 1 dried bay leaf, a sprig of fresh thyme, 2 fresh basil leaves and a handful of fresh parsley leaves.

Cover with boiling water and simmer over low heat until the vegetables are very soft. If the water dries up, add more little by little. Remove the bay leaf and add the salt.

Blend in a blender or use a mixer.

* It is very good served with toast and grated parmesan on top. Now, if you want to keep it light, you can serve it with whole grain bread toast. Delight!
