I went to visit the Jean-Georges restaurant in São Paulo, at Palácio Tangará. One of today’s most prestigious chefs, Jean-Georges Vongerichten owns and operates more than 30 restaurants around the world. He arrived in São Paulo, at the magnificent Palácio Tangará, part of the Leading Hotels of the World and Oetker Collection chain. Great news for those who love to eat well.

The Jean-Georges restaurant in New York is one of my favorites in the world. Not surprisingly, it is on the list of 50 Best Restaurants of the World. Its cuisine instigates and surprises with stimulating flavors, which reveal themselves with each dish.. So, of course I was eager to get to know the São Paulo house. Right away, we notice similarities between the two environments, since in Manhattan the restaurant has large windows overlooking Central Park, while Jean-Georges in São Paulo also has large windows overlooking Roberto Burle Max Park, where the Tangará Palace is located.

Elegant decor, with sober colors, is also present in both properties. And most importantly: it is noticeable that the food, of course, bears his signature, despite not being exactly the same.

For the Jean-Georges restaurant in São Paulo, he selected recipes that reflect his culinary concept, but this time, with the inclusion of Brazilian ingredients. In addition to the à la carte menu, a tasting menu is offered – six courses for R$420 and seven courses for R$650. I was convinced by the maître choosing the longest one and I didn’t regret it one bit. Highlights include the Tomato and Pumpkin salad (with avocado and vinaigrette and coconut water – R$42) and the Burrata (with lemon jelly, extra virgin olive oil and spiced bread – R$48). Among the main dishes, the Sea Bass with Spices (R$95) and the Carré de Cordeiro (mushroom bolognese and pecorino Romano – R$97)

The chef designs all of the hotel’s gastronomic experiences: in addition to the signature restaurant Tangará Jean-Georges, which has an exclusive chef’s table – facing the kitchen and beautiful – the Burle Bar and the Parque Lounge & Terrace, room service and banquet facilities . Jean-Georges’ appointment is due to the successful partnership between the Oetker Collection and the Chef at the Eden Rock St Barths hotel.

The chef created all the menus and assembled a team responsible for the hotel’s day-to-day operations. Tangará Jean-Georges is run by chef Felipe Rodrigues. All other areas are led by chef Pascal Valero. The duo visited JG houses in New York and were trained by a delegation that arrived in São Paulo a few days before the opening to fine-tune the menu and service.

The challenge now for this team is to maintain the high standard of one of the best chefs in the world.

Born in France and based in NYC, Jean-Georges, with three Michelin stars, has 35 restaurants in cities such as New York, Paris, Shanghai, Tokyo and Hong Kong. After studying with master Paul Bocuse in the south of France, Jean-Georges He went to Asia and continued his training at the Oriental Hotel in Bangkok (now Mandarin Oriental), the Hotel Meridien in Singapore and the Hotel Mandarin (now Mandarin Oriental) in Hong Kong.

It was during this season in Asia that the chef fell in love with the exotic and intoxicating aromas of the East. His cuisine is known for abandoning the traditional use of meat broths and heavy creams. It takes advantage of the intense flavors and textures extracted from vegetables, fruit essences, lighter broths and herb vinaigrettes.

The Tangará Palace

The newest five-star hotel in São Paulo, Palácio Tangará has 141 spacious apartments – 59 of which are suites – all with views of the lush vegetation of Parque Burle Max. The hotel was built on the former farm of the late millionaire Baby Pignatari and is the first Hotel masterpiece from the Oetker Collection brand in South America.

The elegant landscaping draws attention and makes a perfect transition between the architecture and the native Atlantic Forest of Burle Marx Park surrounding it. The spaces inside the hotel are discreet and sophisticated and once inside we forget that we are in the great metropolis that is São Paulo. Without a doubt, an irresistible refuge for both foreigners and Brazilians.
