I was invited to dinner at Madrid’s newest luxury hotel, The Madrid EDITION. Centrally located, just a few steps from Plaza Mayor and the Royal Palace, the project is bold, with 200 rooms and two restaurants by renowned chefs. In fact, the inauguration of Edition does justice to Madrid’s attempt to become the new capital of Europe’s luxury hotel industry, along with other new five-star properties, and the revitalization of the city center. So, read below about my excellent experience at Oroya, a restaurant at The Madrid EDITION, led by Peruvian chef Diego Muñoz. Designed by British architect and designer John Pawson of the Ian Schrager Company, the EDITION in Madrid is a modern and elegant hotel. Right at the entrance we come across a curved white staircase that leads to the lobby lounge.

There are 200 rooms, including 21 suites and two penthouses, a spa with five treatment rooms and a sauna, and a 17 meter long swimming pool – the largest in Madrid – in the rooftop. Gastronomy is represented by two restaurants, the Mexican Jeronimo, by Mexican chef Enrique Olvera (the same as Pujol, always on the list of the ten best in the world), and Oroya, by Peruvian chef Diego Muñoz, who led the restaurant Astrid y Gastón , from Lima, to victory as the best Latin American restaurant in The World’s 50 Best Restaurants.

On the roof, Oroya has a relaxed atmosphere, with low lighting (I went for dinner), colored glass panels and full of plants. I loved the layout from the bar, which is right at the entrance, all lit up with several bottles.

In addition, there is also a garden-like outdoor terrace, complete with a vine-covered pergola.

The menu features classic Peruvian dishes, but with influences from Spain, Africa, Italy, China and Japan. To start, we chose some starters, such as tuna tartare and breaded prawns. We also opted for the vegetarian rice with confit artichokes, lettuce and shimeji. The dishes were creative and very well made, no wonder the chef is so famous and competent! Finally, we ended with a chocolate and pistachio dessert, which also included blackberry, vanilla and rosemary.

Furthermore, the drinks menu has great signature options, and the cocktails are excellent, such as the traditional pisco sour.

I loved The EDITION Madrid and I will certainly go back to get the full experience!
