Christmas has arrived and with it the period of panettone and chocotone. For those who don’t know, the origin of panettone comes from Italy and was created by Toni, a chef’s assistant to the Duke of Milan Ludovico Sforza, on Christmas Eve, in 1495. Since then, the delicacy has been a hit in every family’s home around the world. . But, have you ever thought about how to make panettone?

This question may sound difficult in many people’s minds, but it is actually very easy! The recipe only takes 3 steps, which are the preparation of: sponge, dough and filling. Finally, just mix them all together, let the dough rest and bake.

Ingredients for a Sponge

  • 1/2 cup of wheat flour;
  • 2 tablespoons of biological yeast;
  • 1 tablespoon of sugar;
  • Half a cup of warm water (120ml).

Ingredients for the Dough

  • Wheat flour (the amount depends on the number of panettone you want to make. However, for 2, add 500g);
  • 7 tablespoons of butter;
  • ½ cup of sugar;
  • 1 egg and 2 yolks;
  • 1 pinch of salt;
  • 1/2 cup of warm water;
  • Zest of an orange;
  • 10 drops of panettone essence.

Filling for panettone

  • Candied fruits and raisins.

Chocolate filling

  • 200g chocolate drops.

Preparation mode

Sponge

First, in a container, mix all the sponge ingredients: wheat flour, yeast, sugar and water. After stirring a lot, let it rest for 15 minutes. Meanwhile, make the dough.

Massa

For the dough, first, place the wheat flour, butter, sugar, eggs and yolks, a pinch of salt and water in a mixer. Mix well until you get a smooth dough.

Soon after, add the sponge, flavoring and orange zest. Beat for about 10 minutes and let it rest for approximately 40 minutes, the time needed for the dough to rise.

Finally, after the dough has risen, add the filling. If you want to make panettone, it will be candied fruits and raisins, but if your choice is chocotone, add the chocolate drops. Then, distribute the dough with the filling in the paper pans suitable for panettone and place in the preheated oven at 180ºC, for around 35 minutes.

How to make panettone – extra tips:

Firstly, to make the panettone brown better, before putting it in the oven, add a spoonful of butter and refined sugar on top.

  1. A tip used by professionals is to leave the panettone to cool upside down. To do this, use a barbecue toothpick, stick the bottom of the panettone and place it upside down in a deep bowl;
  2. Finally, the last tip is to store the panettone in a plastic bag. This way, it stays soft for longer.
