- Then, immerse the cod in a bowl of cold water, add ice cubes and place in the refrigerator.
- The right amount of water is 2/3 water to 1/3 cod, so that the cod is completely submerged.
- Finally, change the water until all excess salt is removed.
- Then, drain the cod, removing all the water and leave it in the fridge until you are ready to prepare it.
Tips
- It is important that throughout the desalting process the cod is kept in the refrigerator so that it is well preserved.
- During the total time, it is necessary to change the water 4 times, at intervals of 4 hours.
- When changing the water, the right thing to do is change the cod, that is, change the cod in the container. To do this, fill another bowl with ice water, remove the cod from the bowl and place it in the other.
- As for the container that removed the cod, wash it and fill it with water again, then take it to the refrigerator to chill and use it at the next water change.
- After this period, remove a small piece of the cod and try if it is still salty, repeat the water change process.
- Remembering that flaked cod takes less time to desalt than sliced cod.
- Another tip is don’t boil the cod, cook it over low heat.

- The cod desalting time depends on the height of the fillets, therefore, the recommended time is:
- Shredded Cod: 6 hours (change water every 3 hours)
- Normal servings: 24 hours (change the water every 6 hours)
- Thick steaks: 40 hours (change the water every 8 hours)
- Very thick: 48 hours (change the water every 8 hours)
- Very thick loins: 72 hours (change water every 8 hours)
