For those of you who are not obliged to know the universal gourmet dictionary I say that “verrine” is food served in glasses, okay?
This is a salad that goes very well at the end of the year parties and serves a very generous number of people (about 20).
All you need to know to make this salad is the proportion of 500g (1 package) of cooked, skinless chickpeas and 600g of desalted cod flakes. The rest is up to you.
You can use olives, onions, diced boiled potatoes, red and yellow peppers, raisins, apricots, nuts, spices of your choice, in short, use your imagination. Just mix everything, drizzle with good olive oil, salt and pepper (it’s up to you how to season).
To serve, the suggestion is a “bed” of lettuce in strips, with the salad on top, a chopped chive for color and parsley for freshness. You can also decorate the glass to give it a more festive atmosphere, ok?
