Ingredients for sponge
- 150ml of water;
- 2 teaspoons of organic yeast;
- 200g of wheat flour.
Sponge preparation method
Firstly, before we learn how to make homemade chocotone, we need to produce the sponge that is responsible for giving the dough its texture. So, in a bowl, mix the water, yeast and flour, stir until there is no more loose flour. Finally, cover and let it rest for 1 hour.
Chocotone ingredients
- 1kg of wheat flour;
- 150g of sugar;
- 10 egg yolks;
- 400 ml of warm water;
- 20g of dry organic yeast;
- 15ml of chocotone essence;
- 2 tablespoons of vanilla extract;
- 160g unsalted butter;
- 1 pinch of salt;
- 6 tablespoons of honey;
- Orange zest;
- 400g chopped chocolate or chocolate drops.
Preparation mode
First of all, dilute the honey in 200ml of warm water and add the chocotone essence and vanilla extract. In another container, mix the wheat flour, sugar, salt, egg yolks and the reserved sponge. Then, mix this combination with the liquid parts.
