Carrot Cake Recipe

Dough ingredients

  • 270 grams of CARROTS after cleaning and washing (approximately 3 medium carrots)
  • 200 ml SUNFLOWER OIL
  • 3 EGGS
  • 360 grams of SUGAR or 2 cups of tea – Here it actually asks for 400 grams, but I like it better when the sweets are less sweet ;D so I reduced it a little.
  • 240 grams of WHEAT FLOUR or 2 cups of tea
  • 8 grams of BAKING POWDER or 2 teaspoons

How to make the dough

Grease and flour a cake pan. Then, blend the carrots, oil, eggs and sugar in a blender for approximately 5 minutes. Now, place it in a bowl and add the sifted flour and baking powder. Finally, Mix.

Finally bake at 180˚C for approximately 50 minutes or until a toothpick comes out clean from inside the cake.

Carrot cake topping recipes

1. Brigadeiro topping

Brigadeiro ingredients

1 can of condensed milk (can or box) of 395g
1 tablespoon of butter
1/2 cup of chocolate powder
1/2 cup of chocolate sprinkles (optional, to sprinkle on top)

Brigadeiro preparation method

In a pan, place the condemned milk with the chocolate powder and butter. Leave everything cooking over low heat. Stir constantly to avoid sticking.

When it starts to come away from the pan, it’s time to take it off the heat, because it’s ready!

Then, just pour it, still hot, over the carrot cake (which has to be cold). Smooth the brigadeiro so that all parts of the cake receive an (almost) equal amount of frosting. If you want, finish with sprinkles.

2. Ganache coverage

Ingredients for ganache

  • 170 grams of semi-sweet chocolate (56%) chopped
  • 1 tablespoon of glucose or honey
  • 100 grams of unsalted butter

How to prepare ganache

Bring the butter and glucose to a boil. Then, pour over the chopped chocolate. Now, wait 3 minutes and process until it becomes smooth.

Finally, pour it over the cake.

3. Alternative cake topping

Ingredients:

  • 1 tablespoon of butter
  • 3 tablespoons of chocolate powder
  • 1 cup (tea) sugar
  • 1 cup of milk (tea)

How to make:

First, pour the butter, chocolate powder, sugar and milk into a bowl, then mix. Then, bring the mixture to a boil and continue mixing until it reaches a creamy consistency. Then pour the syrup over the cake.
