Beef Mince with Vegetables

This is a mother’s recipe! Very homemade!
It’s one of those totally intuitive recipes, there’s no right amount. You can have more meat, if you prefer, more vegetables, and you decide which ones you want to use.

I used 1 piece of diced pork fillet that I sautéed with onion and garlic until it was well browned. I added a little soy sauce (shoyu), chicken broth (I used that liquid) and balsamic vinegar.

I pre-cooked the vegetables (carrots and potatoes), not the zucchini, because it cooks quickly. I added them all to the meat. I added a little boiling water, added salt and sprinkled black pepper.

In the end, to thicken that good broth that remains in the pan, I used 1 tablespoon of cornstarch dissolved in a little water, just enough to give it a “velvety” texture. I served it with freshly made rice and didn’t need anything else!
