The new menu, based on Omotenashi (art of serving), features cocktails inspired by the great bars of Japan with the use of a thermocirculator, the advanced technology to obtain balanced flavors. Therefore, Alex Mesquita offers recipes that symbolize the perfect union of the two forces of the universe: the energy that comes from the earth and rises to the universe and the energy that descends and returns to the earth.

This movement well expresses the mystical symbolism of the number eight, also interpreted as the symbol of infinity. In other words, this movement is an eternal cycle that now influences new recipes. Without a doubt, it is an experience that only a renowned mixologist could create. Mesquita, who delves deep into the culture and symbols of the places that inspire his creations, was recently recognized as Bartender of the Year.
There is so much care taken with each creation that even the color palette was carefully thought out. Certainly, the restaurant’s customers will be attracted by vibrant colors and elegant presentations full of personality. The menu also takes into account the dishes that make up the restaurant’s menu led by Guilherme Campos, offering a perfect pairing. The chef, who learned how to make Japanese food on his own in the 90s, brought an original touch to the restaurant, making crushed garlic one of the main ingredients used in Shiso’s cuisine.

Elegant and surprising cocktails in 8 new creations
Among the eight creations on the menu, there are, for example, new products such as Shiso Fizz (R$ 56), made with barley shochu – the most consumed alcoholic drink in Japan – shiso syrup, Cinnamon Rosso infused with cucumber, flower water orange tree and sparkling water.
The Kyushu drink (55 reais) also contains cucumber syrup, as well as plum liqueur and Spanish Brandy. A delicious cocktail that as soon as we taste it, we are overcome by a surprising sensation.

One of the ones we liked the most was the Sweet Akira (R$40), made with dry Jerez, Aperol, lychee syrup, passion fruit juice and drops of cherry bitters. A sensational combination. And in the end we can still taste the fruit that adorns the glass. And as one of the mixologist’s proposals is an experience in the culture and symbolism of Japan, while tasting the drinks, we learn that Akira is an affectionate nickname that Japanese girls tend to have when they are children.

It’s also worth trying the Prunus Cocktail (40 reais), very smooth, with a base of Gin, Bourbon, apricot syrup and Tahiti lemon juice. The Matcha Sour (56 reais) brings one of the most common elements in Japan that already has many enthusiasts here too. Thus, with matcha syrup, this drink based on Japanese Gin, lemon juice and drops of orange bitters also surprises with its lightness and well-defined flavor. All of the drinks menu by Alex Mesquita are really very tasty, so any choice from this new Shiso menu will please the most diverse palates.

Oh, and last but not least, Alex Mesquita also signed the drinks menu at Cantô Gastrô&Lounge, the Grand Hyatt’s most casual restaurant. In it, the drinks follow the restaurant’s proposal to bring Brazilianness to the palate.
