Wholemeal Oat and Honey Biscuit

Sweet cakes and pies

This cookie is good for staving off hunger. You know those moments of TOP anxiety when our fat head immediately thinks about devouring something? So that’s my solution to trying to eat something healthier. And oh, it’s really delicious!!!

Ingredients:
1/2 cup whole wheat flour
2/3 cup regular wheat flour
3 tablespoons of finely flaked oats
4 tablespoons brown sugar (I used demerara)
1 pinch of salt
½ tablespoon of cinnamon powder
½ tablespoon of baking soda
25g cold unsalted butter, cut into pieces
2 tablespoons of honey
50ml milk (I used skimmed)
10 drops of vanilla essence

Mix all the ingredients and knead with your hands until the butter melts and becomes a smooth dough. You may need a little more flour, or a little bit of milk may be dry.

I did that trick where I rolled the dough like a bullet and put it in the freezer. Then just cut into thin slices and bake in a preheated oven at 180º until the edges start to brown (about 15 minutes). I baked it on baking paper but it’s not necessary. Once it’s finished baking, carefully remove it from the pan as it will be soft and let it cool, preferably on a wire rack (but if you don’t have one, it can be on a stone in the sink). It gets crunchy afterwards.

Looking closely at these cookies of mine, I can’t help but wonder: Where did I let go of my symmetry? Oh relax!
