2 pounds trimmed, lean corned beef brisket
3 medium carrots, peeled and cut into 1-inch chunks
1 onion, cut into 4ths
1/4 cup chopped fresh parsley
2 bay leaves
1 medium head cabbage, cut into 6 wedges

Directions:
Place the corned beef brisket, carrots, onions, parsley, and bay leaves in the Instant pot and add 3 cups of water.
Cover and cook on high pressure 1 1/2 hours. Natural release then open.
Add the cabbage to the top, cover and cook on high pressure 3 minutes, quick release.
Remove meat and slice.

  1. Don't know if I'm willing to try your method of releasing the pressure manually. My sister-in-law does that with her pot roasts, and it comes out dry and tougher than a boot. I did one at her house and let it release naturally. My brother wanted to know what I did, and I told him. She hasn't released manually since.

  2. In case anyone sees this. Cook the meat as shown, then let it release.

    You can remove it or leave it in there after it releases. Add the carrots and cabbage (and baby potatoes or quartered potatoes if you choose) in and cook it 7 minutes. Up to 10 depending on how soft you want them.

    If you put thr cabbage and carrots in with the meat and cook it for an hour and a half, it'll be baby food.

  3. I am so paranoid of the whole thing blowing up, like old pressure cookers have in the past, but, I put the meat in, and am waiting, I kept coming back to make sure my pot looks like yours, and thank you for the confidence. I am going to make Rueben's tonight!

  4. Thanks! I made this for tonight. Put some potatoes in at the cabbage stage and set the IP for 4 minutes. Turned out great 🙂

  7. Two things that surprised me. You didn't put potatoes in with your corned beef. I would think potatoes would be very important. Second thing that surprised me was cooking the carrots for an hour-and-a-half. Did they not turn to mush?

  8. Turned out great, thanks for such a quick & easy recipe. Great video also; short, sweet & to the point-made with love. I made a few changes based on what I had and diet requirements: rubbed the bottom of the pot with EVOO because I’m not used to the instant pot power & timing yet so many things stick. I used pork broth from the instant pot sweet Italian sausage and fresh fennel I made recently, the only produce I added was cabbage so it would be low carb/keto (3/4 a head bc it was large), just enough chopped onions for flavor, and added some extra spices to the top of the roast in addition to the spice packet (ground mustard, celery seed, garlic powder). I think an hour and a half was overkill for the meat but it was tender and registered 200 degrees with thermometer, but then 3 minutes didn’t seem long enough for the cabbage even though I cut it in quarters. I pulled the brisket out and let it rest on a plate 5-10min before slicing against the grain. I used the same instant pot. I’ll definitely make it again!

  9. Her videos suck. No specifics and more just blabbing. If you giys need to watch her to cook i cant imagine how your meals are turning out. Youre better to watch someone else. She tskes others vudeos and claims to make them hers. Terrible.

  10. Thanks for the post! After following the instructions I found: 1. Rinse the beef b4 so it’s less salty 2. Carrots were way to mushy for 90 minutes (I used potatoes too with the same result)

  11. I prefer to use "Better than bullion roasted beef" and a smidgen of the roasted garlic better than bullion as my liquid but what confused me about this recipe is that she didn't out any potatoes in it?
