Square Pizza with Zucchini and Roasted Tomatoes

I bought a square pizza dough at the supermarket (Walmart) (it’s not “publi”, ok?). I love transgressive food! I’m supporting diversity in the kitchen, friends! After all, why does pizza always have to be round? Oh how rebellious I am today!

I took the opportunity to make a pizza with a more gourmet twist.

I started by preparing the tomatoes and zucchini. I chopped a zucchini (I discarded the softest part of the core) and cut in half 200g of luxury tomatoes that I brought from SC Gourmet.

I lined a baking tray with aluminum foil (just to avoid getting it dirty), drizzled it with plenty of olive oil and added the tomatoes and chopped zucchini. I drizzled with more olive oil, sprinkled with sea salt, pepper, oregano, basil and thyme. I put it in the oven at 200º for 30 minutes. It will release a lot of water, you have to leave it in the oven until the water dries up and only the oil remains. You can serve these tomatoes and zucchini with Italian bread, it makes a WONDERFUL snack!


To assemble the pizza, I spread a thin layer of ready-made tomato sauce, mozzarella cheese, tomatoes and zucchini, a few pellets of ricotta cream and chopped bacon that I dehydrated in the microwave (see here how to make). I put it in the oven for 10 minutes. It was so delicious!



* I wouldn’t even add bacon, but I needed a reason to convince my husband to eat the pizza and just “zucchini and tomato” wasn’t going to happen!
