I took advantage of the wonderful yogurt cake recipe and added the scent of Sicilian lemon. The combination couldn’t be more perfect! I love cakes with a touch of citrus! I find it less sickening, the bad part is that I eat more hahahahaha. This recipe is very simple, check it out:
Blend in a blender (or by hand):
1 glass of natural yogurt;
The same glass (of yogurt) of oil;
3 whole eggs;
Juice of two Sicilian lemons (or 1 Tahiti which is more acidic).
In another bowl mix:
2 cups (the same as yogurt) of wheat flour;
2 cups (the same as yogurt) of sugar;
The grated rind of 1 lemon;
1 tablespoon of baking powder.
Add the liquids to the dry ones, mix well and bake in a preheated medium oven for about 40 minutes in a greased and floured pan. If there is a fluffier and more fragrant cake, I don’t know!
PS: I started my experiment to plant a Sicilian lemon tree at home. If it works, I’ll describe the process for you!
