Shrimp risotto recipe

Ingredients

  • 2 liters of fish or chicken broth
  • 110 g butter (20 g for frying the shrimp and 90 g for the risotto)
  • ½ chopped onion
  • 1 clove of minced garlic
  • ¼ finger pepper (optional)
  • 150 g chopped and seedless tomatoes
  • 200 g risotto rice
  • 60 ml dry white wine
  • 70 g of parmesan cheese
  • Chopped parsley

Preparation mode

  1. First, to prepare the risotto, marinate the shrimp with salt and pepper for 10 minutes.
  2. During this time, place a pan over medium heat and add the fish or chicken broth.
  3. In a frying pan, fry the shrimp with a little butter. At this stage it is very important to grill on both sides, until it is very pink.
  4. Now, in a pan, preferably with a thick bottom, add the rest of the margarine and sauté the onion and garlic.
  5. Then, add the pepper and tomato and sauté everything, stirring to mix.
  6. Therefore, when the tomatoes are falling apart, add the rice and mix well.
  7. Add the wine and stir until the liquid begins to dry.
  8. Thus, add 4 ladles of broth to the risotto and continue mixing. When it dries, add 4 more ladles of broth. Repeat this process until the rice is very soft.
  9. Then, when the rice is almost done, add the shrimp and mix well and turn off the heat.
  10. Then add the parmesan and butter, add salt and pepper and mix everything well, until incorporated and melted.
  11. Let the risotto cool a little and add the parsley.
  12. Finally, assemble the dish, adding some shrimp to decorate and it's ready.
