Savory Pie with Rice Dough

Don’t throw away leftover rice, let’s turn it into a delicious pie! The dough is very light and delicious! I was delighted with the result! The photo isn’t helping because it was from a cell phone, as the camera was packed for the move, but it was so good that I needed to share it with you.

Ingredients:

  • 2 eggs
  • 1 pot of natural yogurt
  • 2 tablespoons of milk
  • 1 tablespoon butter or margarine
  • 2 cups of cooked rice
  • 2 tablespoons of wheat flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder

Blend everything in the blender. You can do it in two ways. Place half the dough in a greased and floured pan, add the filling and cover with the other half of the dough or place the entire dough and filling on top (like I did). Whatever.

Filling can be whatever you want. I used Calabrian sausage (thin), sautéed with onion, tomato, peas and 4 tablespoons of tomato sauce. The filling has to be cold to be used, ok?

Bake in the preheated oven for around 35 minutes, but this time can vary greatly depending on your oven. I opened the oven after 30 minutes, covered the pie with slices of mozzarella, sprinkled with oregano and returned to the oven just to melt. I could have added everything at the beginning but the cheese would dry out. Oh, how evil:

***Important: This dough doesn’t make much, I made it in a small pan and it was still low. This amount would serve well in an English cake pan. I suggest doubling the recipe.
