This dish is definitely in my top 10 ever! I think the result is so wonderful and it’s so easy to make that I’ve lost count of how many times it’s happened here in my kitchen. Now in winter then, it’s a stamped sticker! Truly delicious!

Ragu Ingredients:
500g of meat (rib, hard leg, rump…) cooked and shredded as shown in the video.
2 tablespoons of olive oil
1/2 onion
2 col. chopped celery (soup)
1 small chopped carrot
1 col. tomato paste (soup)
2 col. soy sauce (shoyu) (soup)
1 cup. (tea) from the meat cooking water
1 can of peeled tomatoes or 5 tomatoes without skin and seeds
salt, black pepper and parsley to taste.

Risotto Ingredients
1 liter of homemade or industrialized vegetable broth
1 col. olive oil (soup)
2 col. butter (soup) (one for the beginning and one for the end)
1/2 onion
1 cup and 1/2 (tea) rice for risotto
1 col. (soup) saffron (turmeric)
1/2 cup. grated parmesan (tea)
