These Carolinas are great to accompany ice cream (a variation on traditional profiteroles). The recipe for carolinas is simple (google it), but if you have a good bakery nearby, you can buy it by the kilo and it’s cheap. That was the case here: purchased carolinas cut in half and stuffed.
Filling: Sweet dulce de leche mixed with cream. Two parts dulce de leche to one part cream. Mix well and refrigerate to make it firmer.
After filling, they were stacked in the shape of a pyramid and topped with melted milk chocolate and some fresh cherries to decorate (it could be strawberries).
It has a great presentation, it is a cheap and delicious dessert. We serve with cream ice cream.
