My vegetarian readers will forgive me (or not), but this text will be a feast of meat for those who enjoy a good piece! Personally, I can’t live without good meat, I really like it and I’ll continue eating it for a long time. And yes, I have already watched the movie “Earthlings”.

But being totally corny, I believe we should to respect any food product when we handle it, even more so when it is derived from other living beings, no matter which, who provided their lives so we can continue ours. At least, it is with this awareness that I always cook.

I don’t get to be like Fabio Vivianicontestant on the fifth season of Top Chef, who said: “Why eat vegetables when you have meat!“. Of course he was making fun of me (I hope).

The cut has American origin, the prime rib. In a very superficial comparison, they are the animal’s ribs. However, in this case they were separated and the bone was left, and they are cut giving a lollipop appearance. In another quote from Top Bossin the fourth season this cut was shown.

Since I found it in the city I was very tempted to buy it, I was very reluctant to buy it… the price is almost prohibitive. The cost is around R$50/kg, and each one can vary between 500-800g. In other words, it costs around R$30-45. It’s not an everyday ingredient, literally.

As I wanted to taste the meat itself, the seasoning was as simple as possible: garlic, salt and pepper. And that’s it. I thought about using rosemary, but left it out. It was a little overcooked, the thickness of the piece deceived me… a shame, but I still say: it was worth every penny! What good meat, I want it every day, can you? hahahahah

A roast of roasted cauliflower with mashed potatoes to accompany this beautiful piece of meat, just to say that it had a little carbohydrate. The puree was actually good, but it could have been more interesting. Even seasoned with salt, pepper and nutmeg, I should have added more cheese to the dough. The original idea was to use parsley, but when I saw the amount of potatoes in the fridge, I changed my plans.

Prime Rib and Roasted Cauliflower

Makes: 1 portion


Ingredients: MEAT

  • 1 part prime rib (500g per person)
  • 2 teeth garlic (chopped)
  • Butter without salt (August)
  • refined salt (August)
  • ground black pepper (August)

Ingredients: ROASTED CAULIFLOWER

  • ½ head cauliflower (sanitized)
  • 4 potatoes (medium, peeled)
  • 1 ovo
  • 200 mL leite integral
  • 3 soup spoon butter without salt
  • 150 g granola cheese (grated; or parmesan and +/-100g for finishing)
  • refined salt (August)
  • ground black pepper (August)
  • nutmeg (grated; to taste)
Use the quantities in units of measurement in weight and volume when present. The measures in cups/spoons are just one system courtesy e less accurate .

1 cup: 250mL | 1 tablespoon: 15mL.


Mode: MEAT

  • Season the prime with salt, black pepper and chopped garlic. First, rub the garlic and leave for about 15 minutes, then remove the garlic pieces. Then, season the entire surface of the meat with salt and pepper on both sides.
  • Preheat the oven to 180-200ºC.
  • In a frying pan, heat a good amount of butter (2-4 tablespoons) and a drizzle of oil over medium-high heat. Add the meat, cook each side for about 2-3 minutes. Meanwhile, pour the melted butter around the piece to cook the sides as well.
  • Finish cooking in the oven for 7-10 minutes. Check if your frying pan can go in the oven, if it doesn’t have any plastic parts. Normally, those that are completely made of metal would not have any problems, but check before trying.
  • The estimated cooking time is to bring the meat to medium rareness, but this may vary according to your taste and the efficiency of your stove.
  • Remove from the oven and let the meat rest for about 5-10 minutes before serving.

Mode: ROASTED CAULIFLOWER

  • Method: cook the potatoes until they are soft, but without falling apart. Pass through a potato masher while still hot.
  • In a pan over low heat, add the mashed potatoes, egg and half the milk. Stir constantly, and add the rest of the milk until you get the desired consistency, if you want it firmer, add less. Meanwhile, add the seasonings to taste. As for the salt, it will vary depending on whether you add more or less grana cheese, it is not that salty, but it has an interesting amount of salt. Reserve.
  • Cut the cauliflower into small pieces, leaving some of the stem as well. Place the cauliflower in a hot frying pan and lightly toast, season with salt. Reserve.
  • In individual containers (or in a large one), make a layer of mashed potatoes, a layer of cauliflower, sprinkle some grated cheese, cover with another layer of mashed potatoes and the last layer of cauliflower. Finally, grated cheese on top.
  • Place in the oven with the meat. Oven at 180-200ºC for 10 minutes.
