My mother’s recipe, made by dear Luzia who has worked in her house for over 20 years. This meatball is easy to make, it can be made in the oven or cooked in tomato sauce, but I must confess that the fried version is the one that draws the most sighs. Hands-on:

Ingredients:

  • 400g of meat
  • 2 breads (French or “salt” type), preferably stale
  • 2 eggs
  • 2 chopped seedless tomatoes
  • 1 chopped onion
  • 3 minced garlic cloves
  • 2 tablespoons of olive oil
  • 1/2 cup of green scent

Salt and black pepper to taste.

Remove the skin (only the very superficial skin) and discard, roughly chop the bread and soak in water for 5 minutes. The water should cover the breads. After this time, squeeze them with your hands like a “loofah” and remove all excess water.

Mix the meat, bread and all other ingredients until a uniform “dough” forms. To check if the salt is good, remove a little bit of the dough, brown it in a non-stick frying pan and taste it.

Make balls and fry in hot oil. Makes approximately 30 medium meatballs, dry on the outside and juicy on the inside!!!!!
