Here at home there is always cake left over, because there are only two of us, so this is another recipe that I developed to be made in the form of a pound cake, or another small pan. My shape is 25cm x 12cm. If you want a bigger pan, make two recipes, ok?
Ingredients:
- 100g natural yogurt (I used 1 pot of Greek, but you can use any type of yogurt)
- 2 eggs
- 2 tablespoons of milk
- 2 tablespoons of oil
- 2/3 cup sugar
- 1 cup peanut flour
- 1/2 cup wheat flour
- 1/2 tablespoon of baking powder
* the cup used is 200ml
* I buy the peanut flour ready-made, but it is peanuts roasted in the oven and ground in the processor
Mix all ingredients in the order above. You don’t need a mixer, I just used a wire whisk.
Bake in a pan greased with oil and sprinkled with flour in a preheated oven at 200º. My oven is not the most powerful, so I bake everything that is cake at 200º, if your oven is more powerful, you can bake it at 180º
The time varies according to the brand of your oven, after 30 minutes (after this time you can open the oven so the cake will not deflate) do the toothpick test. Insert a toothpick into the center of the cake, if it comes out clean it’s ready.
