These days I enjoyed my beloved “Bolo de Nada” with concentrated passion fruit juice and it was wonderful! Fragrant, tasty and the best part is that you don’t even need a mixer or blender.
As my husband doesn’t like cake with syrup and filling, I left it plain, but you can cover it with passion fruit mousse or make a syrup with concentrated juice (or fruit pulp) and sugar to pour on top.
I made exactly the same dough as Bolo de Nada, but instead of a cup of milk, I only used 1/2 cup and added 80 ml of concentrated passion fruit juice (pure, without water). Concentrated juice is the one sold in little bottles that we usually mix with water to make juice, manja?
