Meat with Cassava or Atolada Beef

Here at home, cow jams don’t happen very often because the only food my husband doesn’t like is cassava. This is sad for me because I love it!!! I love it in every way, fried, boiled, pureed and stewed cow is one of my favorite dishes!!!

Ingredients:
1.5 kg of beef ribs in pieces
Salt and black pepper to taste
4 tablespoons of oil
1 pinch of sugar
2 chopped onions
3 cloves of garlic, chopped
3 chopped tomatoes
3 bay leaves
1/2 chopped carrot
1/2 seedless chili pepper
800g cassava pieces
1/2 bunch of chopped green scent
Chopped green chili for sprinkling

Season the rib with salt and pepper. Heat a large pressure cooker with oil and sugar over high heat, add the ribs and brown on all sides. Add the onion, garlic, tomato, bay leaf, carrot and pepper and sauté for 5 minutes.

Cover with water, cover and cook for 20 minutes, over medium heat after coming to pressure. Turn off, wait for the pressure to release and open the pan. Add the cassava and cover with more water if necessary. Cover and cook for another 20 minutes, over medium heat after coming to pressure.

Turn off, wait for the pressure to release and open the pan. Return the pan to the heat, season with green chillies, salt and pepper to taste and, if necessary, cook until the ribs and cassava are soft. Sprinkle with green scent to serve.
