Lemon Pie Recipe

Ingredients

  • 200 g cornstarch biscuit
  • 150g margarine
  • 1 can of condensed milk (learn how to make vegan condensed milk)
  • 1 box of cream
  • juice of 4 lemons
  • zest of 2 lemons
  • 3 or 4 egg whites
  • 3 tablespoons of sugar
  • zest of 2 lemons for garnish

Preparation mode

  1. First, let’s prepare the dough for the base of our lemon pie. Therefore, start by grinding the cornstarch biscuit in a blender or processor.
  2. While beating, add the melted margarine and beat some more.
  3. Then, pour this flour into a 27 cm diameter mold with a removable bottom.
  4. With your hands, spread the crushed biscuit crumbs on the bottom and sides of the pan, covering it all evenly.
  5. Once done, place the pan in the preheated oven at 180° C for about 10 minutes.
  6. Remove from oven and reserve.
  7. Meanwhile, let’s make the pie filling. Then, in a blender, beat the condensed milk, cream and lemon juice.
  8. Beat very well until you get a smooth and firm cream.
  9. Then, pour over the baked dough and refrigerate for about 30 minutes.
  10. The last step of the recipe is the topping. Therefore, beat the egg whites with a mixer and add the sugar.
  11. Mix well until it reaches the sigh point.
  12. Finally, unmold the pie and add the topping on top and finish with the lemon zest and it can be served.

Tips for preparing lemon pie

  • When unmolding the lemon tart, just remove the rim from the side, leaving the false bottom of the pan.
  • If you want, you can put the pie in the oven again so that the meringues turn golden brown.but this step is optional.
  • When beating the egg whites, let it beat for 5 minutes or until it doubles in volume.
