Firstly you will need 700 g of sugar. You will also need 3 cups (tea) of water (600 ml), 150 g of finely chopped seedless finger peppers and 1 envelope of colorless powdered gelatin hydrated in ½ cup (tea) of cold water.
Way of doing
First, mix the sugar with the water in a pan and heat over medium heat, without stirring, until you obtain a thick syrup. Add the pepper and gelatin, mix and remove from the heat. It’s ready and also goes well with roasts.
2 – Rosemary jelly

Ingredients
First you need 200 g of rosemary twigs. In addition, you also need 5 kg of chopped unpeeled apples, 8 liters of water, 800 ml of white vinegar and 2 kg of crystal sugar.
Way of doing
First, wrap the rosemary branches in a thin cloth and tie with cotton string and set aside. Meanwhile, bring the apples and water to the boil and let them boil for 35 minutes. Strain through a cloth over a sieve, letting it drain without pressing. Then return the syrup to the pan and add the other ingredients, including the rosemary bundle.
Place over medium heat and let it boil, stirring occasionally, for 1 hour and 45 minutes, until it reaches a jelly-like consistency. To check, place some on a cold saucer, wait a few moments and turn the saucer over. Pack the product in sterilized jars, cover and boil for 20 minutes with water filling half of the jars. Let cool and store in a protected, dry place. Once opened, keep in the refrigerator. Additionally, it can work for brushing roasted meats.

Ingredients
Firstly, you will need 3 cups (tea) of chopped apricots. In addition, you will also need 2 cups (tea) of water and 2 cups (tea) of sugar.
Way of doing
Bring the ingredients to the boil and let them cook, stirring occasionally, until they become sweet. When ready, let it cool, puree it in a blender, place it in a sterilized container with a lid and store it in the refrigerator.
4 – Clove lemon jelly

Firstly, you will need 1 kg of clove or country lemon paste. In addition, you will also need 800 g of crystal sugar.
Way of doing
First pass the lemons through a fine drain to remove the skin lightly, without going too deep, cut them into 4 and remove the seeds. Transfer to a pan, cover with water and boil for 10 minutes. Let it cool, drain all the water and top up again with cold water. Cover the pan and leave to rest. Repeat the operation 3 times a day for 3 days or until the bitterness of the lemon disappears.
After three days, drain the water completely and grind it in a processor or grinding machine, obtaining the lemon mass. Add the sugar and cook over medium heat, stirring constantly, until it starts to come away from the bottom of the pan. Distribute into sterilized jars with lids, boil the jars for 20 minutes with half of the water and, once cool, store in a dry, sheltered place. Once opened, keep in the refrigerator.

First you will need 3 cups (tea) of chopped tangerine peels. You will also need 3 cinnamon sticks, 1 cup (tea) of tangerine juice and 2 cups (tea) of granulated sugar
Way of doing
Boil the tangerine peels 3 times, changing the water. Drain, mix the other ingredients and cook over low or medium heat, stirring constantly, for 30 minutes. Transfer to a glass jar with a lid, let it cool and keep it in the fridge.
