The honey bread cake is a larger version of the stuffed honey bread we know. Likewise, the cake has an incredible dough with spices, such as ginger, cinnamon or nutmeg, which makes it very aromatic. And contrary to what you might imagine, it’s not too sweet or cloying. Furthermore, it is a very practical and easy recipe to make, without needing a mixer, just a blender.

And the result is a fluffy dough, very light and very tasty. Anyway, the preparation time is 70 minutes, and each recipe yields 20 servings. And you can serve the gingerbread cake with or without filling and topping. Check out the step by step below.

Honey bread cake recipe

Ingredients

  • 4 eggs
  • 2 cups of brown sugar cream cheese
  • 2 tablespoons of margarine
  • 3 cups of wheat flour curd
  • 1 cup of powdered chocolate cream cheese
  • 1 1/2 cup of cream cheese
  • 2 spoons full of honey
  • 1 bar of milk or semi-sweet chocolate
  • 2 tablespoons of cinnamon powder
  • 1 tablespoon of clove powder
  • 1 tablespoon full of baking powder

Preparation mode

  1. First, put all the ingredients in the blender, with the exception of the baking powder, blend well.
  2. Then, add the baking powder and mix.
  3. Then pour the dough into a greased and floured pan.
  4. Place in the preheated oven for 40 minutes.
  5. Finally, when the honey bread cake is baked, remove it from the oven and let it cool (how do you know the right point for the cake).
  6. Serve as you prefer.

Tips

  1. You can substitute honey, but honey helps to sweeten the cake more naturally (natural sweeteners), and also makes the dough moister.
  2. To make the dough very fluffy, pass the dry ingredients, such as wheat flour, through a sieve before using.
  3. Another interesting tip is that to check if the cake is baked, insert a toothpick and see if it comes out clean. If it comes out, it means the dough is ready.
  4. An option for serving the honey bread cake is filled with dulce de leche, it can be purchased or made at home, cooking the can of condensed milk (see vegan recipe) in the pressure cooker (learn how to do it). It’s delicious.
  5. Regarding the filling, even when firm, the dulce de leche tends to run out if it is too hot. So, to contain the filling around the edges, create a kind of barrier on the side using firmer ganache (2:1 chocolate to cream).
  6. A great option is to fill the honey bread cake and cover it with chocolate frosting (cake filling options). Then, when the cake has cooled, cut it in half and spread the dulce de leche over it.
  7. For the topping, prepare the ganache by melting 200g of semi-sweet chocolate and mixing with a box of cream and 1 tablespoon of butter. Then, with the ganache still soft, spread it all over the cake and refrigerate.
  8. If you want the cake to be wetter, you can make a syrup with 70g of honey, 100g of water, 1 cinnamon stick, 8 cloves and 20 ml of rum (optional).
  9. To prepare the syrup, add water, honey, cinnamon and cloves to the pan and place over medium heat, let it boil for 1 to 2 minutes. Let it rest for 30 minutes and use it to drizzle over the cake.

  1. Another option is to cut the honey bread cake into equal pieces and dip each piece in chocolate.
  2. First, refrigerate the filled cake for 60 minutes so that it becomes firm. This will make it easier when giving the chocolate bath.
  3. So, melt the chocolate (learn how) and mix it with some type of fat, it can be common vegetable oil, coconut oil or cocoa butter. This way, the chocolate will become more liquid.
  4. Finally, give each piece of cake a chocolate bath and place it in a greased pan, or if you prefer, you can put baking paper on it to prevent it from sticking. And refrigerate until the chocolate dries completely. Remembering that honey bread cake does not need to be stored in the refrigerator.
