Homemade Natural Yogurt to Start the Day Right

Natural yogurt with papaya balls, granola and honey = happy breakfast! I’ve already talked about homemade yogurt a couple of times here on the blog, but as the recipe is very simple, it’s always worth repeating because making your own yogurt is very easy and certainly cheaper and healthier!

Just heat a liter of milk (I use semi-skimmed milk) until it “almost” boils. When it threatens to boil, turn off the heat. Mix in another container 1/2 pot of full-fat natural yogurt and 2 tablespoons full of powdered milk (I use skimmed Molico). Powdered milk is optional, but it helps reduce whey.

Remove a ladle of hot milk, then add it to the mixture (yogurt and powdered milk) and stir well, now add everything back to the rest of the hot milk. This is necessary to avoid lumps. Place in a container, preferably glass and with a lid (but use those marinex ones with a plastic lid).

Store the covered container inside a thermal bag, close it and keep it in a stuffy place (I place it in the oven or microwave). Let it rest for at least 6 hours and only then put it in the fridge (after freezing it will harden a little more).

Important

With whole milk it is firmer and tastier, but with semi-skimmed milk it also works. Skimmed milk makes a very watery yogurt (I don’t recommend it).

If you don’t have a glass container with a lid, use plastic wrap. If you don’t have a thermal bag, wrap it tightly with newspaper or a towel and place it in the oven as the important thing is that the heat of the milk is preserved as much as possible.

Look for a natural yogurt that contains only yeast and milk in its composition.
