This recipe is one of the classics from my mother’s house. Our family loves it so much! I think it’s even tastier than French fries. It’s really delicious and super crunchy, but as it’s fried, we need to manage it, right? But see how simple it is to prepare:
Slice the eggplant very thinly and soak in salted water for 5 minutes (250 ml of water and 1 dessert spoon of salt). Drain, dry with paper towel.

Sprinkle salt and pepper on each slice and coat them in cornstarch (Maizena). Attention, at this stage I “dip” the eggplant slice in the cornstarch, remove it, press it with the palms of my hand (making a sandwich with the eggplant in the middle to cover the entire length). Then just fry in oil (I used olive oil).

As the slices are thin, you don’t need much oil. It’s super crunchy! When the slice is too thin it burns in the center, it’s normal for it to be like that, but it’s great, trust me! I would easily swap the fries for this eggplant!
