Do you know when you need an easy, quick and delicious snack? Cornmeal Muffin Muffin It’s the choice! A very versatile and wild recipe.
This version is more american style muffin and flirt a little with the cornbread: a type of corn-based quick bread. And it’s on that line between salty and sweet.
For being a fubá muffin It’s drier than a normal muffin, so we suggest eating it with tea, coffee or juice. Pure is great, but with some butter and it’s half warm it’s great. It also tastes great with jams in general.
And being drier, you could also use it as “bread” when eating soup or serving it with tomato sauce!
In the recipe, I used canned corn Even though there are some brands that are just corn and nothing else. But it could have been frozen in hot water. You could even have the corn on the cob already cooked, but it would be more work and… I didn’t feel like it.
And a tip: grease the pan used very, very well! Otherwise, it will stick more than it should! I hope you make it and enjoy it!
Cornmeal Muffin
Makes: 12 units
- 210 g wheat flour
- 175 g Corn meal
- 70 g crystal Sugar
- 15 g chemical baking powder (about 2-1/2 tsp)
- 3 g sodium bicarbonate (about 3/4 tsp)
- 6 g refined salt (about 1 tsp)
- Black pepper (August)
- 300 g green corn (from tin, I)
- 2 eggs
- 125 mL vegetable oil
- 170g unflavored yogurt
- 170 mL leite (any type)
- 100 g green corn (from lata, II)
1 cup: 250mL | 1 tablespoon: 15mL.
- Heat the oven to 180°C. Grease a muffin tin with 12 cavities very well with butter or margagina and sprinkle cornmeal (or flour).
- In a bowl mix flour, cornmeal, sugar, yeast, baking soda, salt, pepper, corn (I), eggs, oil, yogurt and milk. Stir until uniform, about 3-4 minutes.
- Divide the dough into the muffin pan and top with the corn (II).
- Bake in the oven at 180°C for 30-35 minutes or until golden. Test with a toothpick, it should come out clean.
- Remove from the oven, let cool for 10 minutes and transfer the muffins to a wire rack.
- Serve warm or room temperature with butter and honey.
- Corn: in total there are 2 cans of 200g of drained corn.
