If there’s one thing we like around here, it’s Corn Cake, a new recipe has appeared and I stop everything to try it because there’s no one who can resist this classic of Brazilian cuisine!

Inside this “Brazilian” it ends up being a recipe that passes from generation to generation, but each family has its favorite and in each region of the country we will always find it among our favorite delicacies. Its ease of making, combined with affordable ingredients, makes this cake everyone’s favorite when drinking coffee.

Basic Corn Cake Recipe

Look, there’s no secret, here’s a basic corn cake recipe for you:

Ingredients:

  • 2 cups of green corn (but can be canned or fresh)
  • 3 eggs
  • 1 cup of sugar
  • 1 cup of milk
  • 1/2 cup vegetable oil
  • 1 and 1/2 cups of wheat flour
  • 1 tablespoon baking powder
  • A bit of salt

Preparation mode:

First Preheat the oven to 180°C and grease a round pan with butter and flour. Then in the blender, add the corn, eggs, sugar, milk and oil, beat until you get a homogeneous mixture.

In a bowl, sift the wheat flour and add the salt, then pour the liquid mixture from the blender over the flour and mix well until you get a uniform dough.

Lastly, add the baking powder, but be careful, mix gently until incorporated into the dough. Pour the batter into the greased and floured pan and bake for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove from the oven and only once it has cooled, remove it from the mold. Tip: If you prefer, you can add grated cheese or grated coconut to the dough to give it a special touch.
