
I must have been related to the “penosas” in a past incarnation because I LOVE corn! For me, if there is corn in the recipe, it is already 50% guaranteed success. I made this recipe on intuition and it turned out really well.
I crushed it with the mixer (you can use a blender):
2 eggs
2/3 of a can of green corn (without water)
3 tablespoons of milk
3 tablespoons of wheat flour
1 tablespoon of olive oil
1 teaspoon of salt
1 teaspoon of powdered seasoning for vegetables
A pinch of black pepper
1 tablespoon of baking powder.


I blended everything, but without being too fussy, I left a few pieces. I mixed the rest of the can of corn, 4 slices of chopped turkey breast, a handful of parsley and covered it with parmesan. I took it to bake in ramekins greased with olive oil (yields 4 portions).
*Oven preheated to 220º until the surface is golden.
I didn’t take a photo because…I don’t know, I was lazy, or because I wanted to eat and not take photos, but the cupcakes unmold easily and look beautiful! And cute! And fragrant! And it all!
