May 28th is World Burger Day and it doesn’t go unnoticed here at You Must Go. Therefore, we asked some chefs from Rio and SP: “What’s your favorite burger? The one you ask for on your day off, or when you are very tired after an intense day of work.” Well, you can find the answer below! After all, I’m sure that, like us, you’re also curious to know which chefs’ favorite burger is! There is something for all tastes, even vegetarians and vegans. In fact, take the opportunity to also read about the new Galeto Rainha and the latest additions to the Fairmont’s gastronomy.
Chefs’ favorite burger
Chef Marcones Deus, from Páreo Restaurante (RJ)
As a lover of Brazilian cuisine, chef Marcones Deus prioritizes typical Brazilian ingredients not only for the restaurant’s recipes, but also for his choices when he is off duty. “The last burger I tried and I fell in love with was the CajuBurguer, from Caju Gastrobar”, says the chef. He uses cashews in his preparation, an input that Marcones also uses in his cooking. In addition, it comes with 150g of termite, a mix of cheeses, crispy onion and cashew mayonnaise with hot pepper.

Chef Nathalie Passos, from Naturalie Bistrô (RJ)
Hello vegans and vegetarians! Chef Nathalie Passos, from Naturalie Bistrô, recommends the ‘Maré’ burger, from Vegan Ti Burguer. “He imitates a McFish. It’s marinated and breaded tofu, and comes with tartar sauce, so it’s very reminiscent of McFish, but it’s completely vegan. It’s delicious, I love it! I like all the burgers at Vegan Ti, they are very good, but this is actually my favorite.”, explains the chef.

Chef Tuca Mezzomo, from Charco (SP)
“The burger that I love and that I always order here at home is the one from Guarita Burger. My recommendation, without error, is the Smash Classic: burger, Guarita cheese, onion, pickles, ketchup and mustard. The snack delivers everything I want and what I like in a burger, quality products and no frills. In other words, simple things done well!”, says Tuca. Certainly mouth-watering!

Chef Ronaldo Canha, from QuiQui (RJ)
On his days off, chef Ronaldo Canha usually takes his 15-year-old son Bernardo to eat at B de Burguer. “We love B de Burger. We always go to the burger place when we want to eat a delicious burger. In fact, Bernardo and I don’t even look at the menu anymore and we have the habit of always ordering the same suggestion: B de Bombado.”, says Ronaldo. Therefore, B de Bombado comes with a house blend Angus gold wrapped in a web of bacon, a mix of cheeses, slices of bacon and caramelized onions in dark beer.

Chef Renato Carioni, do Cosi (SP)
”São Paulo is the land of hamburgers, every corner has one. Among my favorites are the CHEEEEEEESUS (180g tall burger, double cheese, ketchup, mustard, onion and house pickles), created by my friend Luís Filipe for Fat Cow. In fact, another one that is worth every calorie is the Veneto (140-gram Angus beef burger with monterey jack cheese, artisanal bacon, Mexican jalapeno and truffled honey mayonnaise), very umami, with sweetness and spice, from Frank & Charles”, says the chef. It does not stop there!
“In addition to the unmissable Hooligan (Mandioquinha brioche, 180g burger, Brazilian cheddar, pickles, bacon and hooligan mayonnaise (horseradish, Korean wasabi and karashi), by Paulo Yoller for Meats”, adds Renato.

Veneto, indeed a beautiful burger!
Chef Silvia Percussi, do Vinheria Percussi (SP)
Silvia is a big fan of burgers, she loves making them at home and ordering delivery. “My favorite is with cheddar cheese. I admire the work of Luís Cintra, who brought authentic American taste to São Paulo, with his succulent Road Burger (150 g burger, cheddar cheese, bacon, grilled onion and barbecue sauce) from St. Louis. At Cabana Burguer, you can find everything from the classic Cabana (Smash burger with American cheese, lettuce, tomato and Cabana sauce served on house-made bread) to more sophisticated ones, for example, the Truffle Burger (160g burger with prime wagyu beef, English cheddar , caramelized onion, black garlic paste with white truffles and cabana sauce served on house bread)”, says Silvia.

Furthermore, we asked the chef’s permission and recommended two more burgers for you to enjoy and celebrate the date!
Sabor Doc e Malta (RJ)
We asked the Chefs for permission and also recommended Sabor Doc and Malta. After all, the burger is made with brioche bread, 180g burger, Emmental cheese, red onion, pickles and aioli. It can be found at the Malta Beef Club restaurant and also at Sabor DOC. In fact, there is a promotional campaign going on, when you buy a hamburger: DOC or Malta, get a Colorado Ribeirão beer!

The Carioca Cevicheria (RJ)
We couldn’t forget to mention the burger at La Carioca Cevicheria. The menu, which is mainly ceviche, features a burger made with tuna, criolla salsa, amarilla salsa and rustic potatoes (R$29). It is available at Jardim Botânico and Ipanema units, while for those who prefer to order from home, just order delivery!
