Cauliflower Cream with Potato and Parmesan

The ingredients for 4 servings are:

  • 2 tablespoons of olive oil;
  • 1 chopped onion;
  • 3 chopped garlic cloves;
  • 1 small cauliflower separated into florets;
  • 2 medium potatoes, chopped;
  • 1 envelope (or tablet) of powdered vegetable broth;
  • 1 tablespoon full of cornstarch;
  • enough boiling water;
  • 1/2 cup grated parmesan;
  • salt and pepper according to your taste;
  • parsley (optional).

Sauté the onion and garlic in olive oil. Add the cauliflower and potatoes and sauté for a few minutes, add the vegetable broth and mix. Cover with boiling water without exceeding the level of the vegetables. Cover the pan and let it cook until the vegetables are soft. If you prefer, place it in the pressure cooker and leave it for 10 minutes (after it reaches pressure).

Add the cornstarch and grind everything with a mixer, or blend in a blender (if you want it to be green, blend a handful of green chilli together). Return to the heat, stirring constantly, to cook the starch and thicken it. Add salt and sprinkle black pepper. Turn off the heat and add the grated parmesan. If you want a lighter version, use cubes of white cheese. Decorate with parsley.
