I was dying to come up with something with gift that Abelhinha sent me from Portugal. So I managed to combine the two ingredients in a single recipe and made a pudding using carob flour and cuajada. It was delicious!

For those who don’t know, Cuajada is a powder that is added to puddings and mousses to solidify them without having to spend hours in the bain-marie or oven. Unfortunately, Royal did not launch this product in Brazil. Carob flour looks like powdered chocolate and is a healthier substitute for this ingredient. More information read here.

For the pudding, I put it in the blender jar:
1 can of condensed milk, 1 egg, 1 tablespoon of sugar, 2 tablespoons of carob flour, 2 packets of cuajada and I added milk until I had 1 liter of liquid.

I beat it for 1 minute and brought it to the boil until it thickened. I put it in a caramelized mold and after 2 hours in the fridge, I unmolded it. Carob flour looks like powdered chocolate with a roastier, sweeter taste. Approved!
