One of the recipes I was most asked to record on video was the Warm Green. This is another recipe that over time I have modified the way I prepare it and that is why it is a little different from the recipe I posted here on the blog a few years ago, but I think it is even easier to prepare and a little more close to the original Portuguese version.

Ingredients:
½ chopped onion.
3 chopped garlic cloves.
Half a kilo of chopped potatoes.
2 sausage segments in large pieces (if it’s thin sausage, 2, if it’s regular pepperoni, use just 1).
700ml vegetable broth.
Salt and black pepper to taste.

Start by preparing the vegetable broth. If you want to make it easier, use 1 tablet or envelope of industrialized broth dissolved in 700ml of very hot water. If you want to make homemade broth, see the recipe (here).

Sauté the onion in olive oil. When it wilts, add the garlic cloves and sauté a little more. Add the potatoes. Add the sausage (I just cut each segment in half). Add 500ml of vegetable broth and bring to a boil (reserve 200ml so that if it becomes too thick, add it at the end).

When the potatoes are soft, remove the sausages. Mash the potatoes in the broth using a masher, if you don’t have one, remove the potatoes, mash with a fork and then return to the pan.

Cut the sausages into slices and return to the pan. Add 100g of sliced ​​cabbage. If necessary, add more vegetable broth to make the broth less thick.
