Almond Cake

Sweet cakes and pies

This recipe was completely modified according to the “you don’t have it, you go it yourself” rule.
The original recipe called for Brazil nuts, pitted plums and cherries and I didn’t have any of the three ingredients, but so what? Cooks have poetic license to create oras!

“So”, I mixed: 1 cup of flour, ½ cup of refined sugar (I used culinary sweetener), ½ cup of brown sugar, 1 teaspoon of cinnamon, 1 dessert spoon of baking powder (all sifted to make it fine OK?).

I added to the dry ingredients: 1 cup of shelled almonds (carelessly chopped), 1 cup of black and white raisins (I left them to soak in water with rum for 10 minutes), 1 chopped small banana. Mix everything until it looks like dry crumbs. Beat (with a fork) 2 large eggs, or 3 small ones, add a dessert spoon of vanilla essence and add to the rest of the ingredients.

Place the mixture in a greased and floured pan (it won’t grow much) and bake in the preheated oven for about 35 minutes. It looks like it’s going to go wrong, but it turns out so well and it looks beautiful! The next one I will make with apricots, cherries, plums and Brazil nuts (which are now called Brazil nuts).
