Grain Risotto with Chicken and Vegetables

There are days when lighter food is a necessity. I think it will serve very well for those who overdo it during Carnival (and are there those who don’t overdo it?).
This recipe is not faster because this rice takes longer to cook, but it is very simple, check it out:

I sautéed 1 chicken breast cut into cubes (already seasoned) in olive oil with 1/2 onion and 2 large cloves of chopped garlic. When the mixture was already golden brown, I added 1 cup of chopped vegetables (I used carrots and green beans), mixed well and added 1 cup of rice (I used 7 cereals with soy, but it could be any of that type). I added 1 packet of powdered chicken broth, but if you prefer, you can use homemade broth and covered it with boiling water until it reached the level of the vegetables that were floating.

I covered the pan and let it cook for 15 minutes. I opened the pan and left it until the aga dried. Almost at the end I added 1 tablespoon of balsamic and a little freshly ground pepper. Light and very tasty!
