Rice with Zucchini and Coriander Seeds

I like having a change of white rice every day. And then I remembered the coriander seeds that were already forgotten in the cupboard (in Indian cuisine it is common to use these seeds in rice) and the zucchini abandoned in the vegetable drawer and this delicious rice was born.

I sautéed 2 chopped garlic cloves and a teaspoon of coriander seeds in olive oil, which I crushed in a mortar. I added 1 grated zucchini (I discarded the core with the seeds) and 1/3 of a tablet of vegetable broth. I added a little water to dissolve the broth and added 1 cup of rice. I added 1 teaspoon of salt and boiling water until covered. I let it cook until the water dried (first with the pan half covered and then covered).

It was very tasty!!! My heart is all your zucchini!!!!
