São Paulo is always renewing itself in terms of gastronomy. On my last trip to the capital, I discovered KŌON, a new Japanese restaurant in Itaim run by renowned chef Rafael Hidaka, who has accumulated Michelin stars for places he has worked, such as, for example, the Mee restaurant at the Belmond Copacabana Palace. The restaurant features a menu where Brazilian and Japanese cuisines come together. Meanwhile, the atmosphere is elegant and sophisticated, with high ceilings and an open kitchen. The restaurant’s atmosphere is divided into the main hall with a sushi bar, deck with retractable roof, chef’s table, mezzanine for private events, as well as a beautiful, well-lit bar, ideal for a drink before dinner.

On the menu, the chef offers a reinterpretation of traditional Japanese cuisine, exploring ingredients, textures and local techniques. A highlight is the Omakase, served at the Sushi Counter and made by chef Billy Tatsushi. Additionally, at lunch and dinner, there is an à la carte menu and an executive menu. The hot kitchen is under the command of chef Joaquin Laborde.

I had an impeccable dinner at this new Japanese restaurant in Itaim, with very fresh and tasty fish. Among my choices, for example, were the doubles of tuna with foie gras, the thin slices of white fish with ponzu sauce and the sashimi of blue fin tuna.

In addition, there are also special sushi and niguiris, such as scallops with truffle butter and salmon roe, and crayfish with black truffles and roe. More than approved!

Finally, to drink, in addition to a varied selection of sakes, there is also a great wine list. The cocktails, prepared by bartender Luiza Limas, range from classic to original.
