Approximately 40 inspectors from the Michelin Guide France 2019 visit the country and Europe to evaluate restaurants. They use the following criteria: the quality of the products, the “personality” of the cuisine (or creativity), the mastery of cuisine and flavors, the quality/price, as well as the regularity in the quality of the dishes offered.

To get 3 stars, for example, a restaurant must produce “exceptional cuisine, a table worth the trip.” Laurent Petit, who founded Le Clos des Sens in Annecy 26 years ago, and Mauro Colagreco, chef at the Mirazur restaurant in Menton, have won their third star. In all, there are 27 three-star restaurants in France.
