Creamed Spinach with Potato

It’s getting cold here and I’m already running to make some soup or cream. This is super tasty and very simple to prepare. I use frozen spinach which I find much more practical. If you want to use fresh spinach you can also, just add half a chopped bunch without the thick stalks.

Ingredients:
2 tablespoons of olive oil;
1/2 chopped onion;
2 cloves of chopped garlic;
2 frozen spinach balls;
3 large chopped potatoes;
3 tablespoons of grated parmesan;
Salt, black pepper, thyme and nutmeg to taste.

Sauté the onion in olive oil until wilted. Add the garlic and before browning add the potatoes, spinach (I add it frozen and let it defrost in the pan) and a few thyme leaves.
I cover with boiling water. I don’t add too much water, just enough to cover without overdoing the ingredients. If needed, I’ll add more.

When the potatoes are cooking, I use a masher to crush everything. You can blend it in a blender or mixer. I add the parmesan and season with salt, black pepper, nutmeg. When serving, I add a little more parmesan. This quantity is for 2 people ok? Then you multiply it according to your people there. I love this cream-puree soup so much hahaha.
