Zucchini, Curd Cheese and Champignon Quiche

Sweet cakes and pies

In the fridge there was some zucchini that needed to be used, some curd cheese sticks left over from some “barbecue” and some leftover pickled mushroom that needed to be used and so this quiche was born. It was delicious!!!
I used the dough from the fantastic chicken pie. This –> here.

For the filling:
– 3 tablespoons of olive oil;
– 1/2 chopped onion;
– 2 cloves of chopped garlic;
– 1 large grated zucchini (I left out the core with the seeds);
– 100g of preserved mushrooms;
– 3 tablespoons of chopped green onion;
– salt and black pepper according to your taste.

I sautéed the onion and garlic in olive oil, added the zucchini and mushrooms and let it sauté well. I added the chives, seasoned with salt and pepper. I let it cool for the next step.

When sautéing the filling I added:

– 1 cup of curd cheese in cubes (can be any other cheese);
– 3 small eggs, lightly beaten;
– 100 ml of cream (1/2 small box);
– 2 tablespoons of grated parmesan;
I put the mixture over the dough (raw) and baked it at 200º until golden on top. It was divine!!!
