
This cake was intuitive, I didn’t follow any recipe, and although it wasn’t a beautiful cake, it was very tasty and healthy, which is my focus at the moment. I only used wholemeal flour but it was extremely soft. I loved the result!
The ingredients are:
1 ovo
4 tablespoons of sugar (can be brown sugar or sweetener for the oven and stove)
3 mashed small bananas (mine weren’t huge)
1/2 cup chopped Brazil nuts
4 tablespoons of oil
2/3 cup (tea) wholemeal flour
½ cup of finely flaked oats
1 tablespoon chemical yeast powder
1 tablespoon of cinnamon powder
1 teaspoon of vanilla essence (optional)
3 tablespoons chocolate chips (optional)
Mix all the ingredients with a fork or wire whisk (it is not necessary to use a mixer or blender). Bake in a greased and floured pan. Test by inserting a toothpick into the center of the cake; if it comes out clean, it is baked.
Important:
– This cake doesn’t rise much, so don’t use a very large pan. Mine yielded 1 pan of English cake.
– The riper the banana, the sweeter it is, so if your banana is not quite ripe, add 1 more tablespoon of sugar.
