Wholemeal Apple and Walnut Cake

Sweet cakes and pies

The second phase of the diet allows me only whole carbohydrates and as I was dying for a sweet treat it was the best I could do, considering I couldn’t use the tastiest and most ordinary things on the face of the Earth: sugar and white flour.
Is this cake wonderful? No. This is wonderful, but it is delicious, healthy, without sugar and has its merit. For those who spent 15 days without sugar and carbohydrates, it is a treat from the Gods!!!


Recipe for a small cake:
2 apples;
– 2 eggs;
– 1 teaspoon of cinnamon;
– 1/3 cup of oil (I used canola);
– 1/2 cup of milk (I used skimmed);
– 1 cup of chopped walnuts;
-2 cups (180ml) of whole wheat flour;
– 1 dessert spoon of baking powder;
– 1 pinch of salt;
– 2/3 cup of culinary sweetener for oven and stove.

Blend in a blender:
1 chopped apple without the peel, oil, eggs, milk, salt and sweetener.
In a bowl, combine the flour, yeast and cinnamon. Pour the blended liquids over them and mix. Finally add the other chopped apple (without skin) and the walnuts. Bake in a preheated oven, in a greased and floured pan for about 30 minutes.
