This week I tried four new pasta dinners! Howard’s favorite was the Fettucine with Broccoli. Mine was the Ranch Pasta with Chicken. I hope you discover a new favorite too!

Taco Pasta
2 cups of dry spiral pasta, cooked and drained (Do not rinse)
1 pound of lean ground beef
1 cup of chopped onion
1 package of taco seasoning
1 cup of cheddar cheese (I grate my own cheese because the pre-shredded does not melt as well)
Cook beef and onion in a large skillet and drain off fat if necessary. Add in taco seasoning and 2/3 cup of water. Simmer until liquid is absorbed. Add pasta and cheese and stir until combined.

Ranch Pasta with Chicken
4 cups of dried egg noodles, cooked and drained (Do not rinse)
1 1oz package of Hidden Valley Ranch Dressing
1 stick (1/2 cup) of unsalted butter
1/3 cup of parmesan cheese
2 cups of cooked, cubed chicken
Melt butter in a large sauce pan and then add dressing mix. Add cooked noodles and chicken to the pan and stir until well combined and heated. Sprinkle with Parmesan cheese and mix well.

Fettucine with Broccoli
10 oz of fettucine, cooked and drained (Do not rinse)
3-4 cups of fresh broccoli florets
3 tablespoons of butter
2 cups of whipping cream
1 cup of grated parmesan cheese
Season to taste
Cook broccoli in butter until crisp tender. Season to taste. Add cream and bring to a simmer. Add pasta to the pot and warm until heated. Remove from heat and stir in parmesan cheese. Mix thoroughly.

  4. Looks delicious. These are some things I can definitely make. Not too expensive. Thank you for the ideas. I just made cheeseburger eggrolls from the magic kingdom in Walt Disney World. They where delicious.
