Because of the great national commotion on instagram.com/pratofundo, here is this incredible recipe called Waffle Churros.

In fact, the real thing is nothing more than the basic waffle covered with that traditional mix of sugar and cinnamon found in churros or cupcakes. There are several waffle recipes, I just adapted mine to be closer to the fried sweet.

I like my waffles more crispy than soft, so this is the version I present. In the dough I use a little cornstarch and the egg whites. I had already tried others without starch, but it really makes a good difference in the final product.

As expected, it’s a good place to stick your foot in the jacá. For the sugar and cinnamon mixture to stick to the waffle, you need to butter it. Unlike churros and dumplings that are fried, they already have this layer of fat to fix them. And no, without it it won’t stick. I tested. Because of this extra sugar, the dough itself is not as sweet either.

  • 200 mL leite integral
  • 115 g wheat flour
  • 35 g maize starch
  • 30 g crystal Sugar
  • 1 ovo
  • 25 g butter without salt (melted; fresh cream)
  • 8 g chemical baking powder
  • 1,5 g refined salt
  • Cinnamon powder (August)
  • Butter without salt (melted; to taste)
  • Cinnamon powder (August)
  • Crystal Sugar (or refined; to taste)
Use the quantities in units of measurement in weight and volume when present. The measures in cups/spoons are just one system courtesy e less accurate .

1 cup: 250mL | 1 tablespoon: 15mL.


  • In a bowl, mix the dry ingredients: wheat flour, cornstarch, crystal sugar, baking powder, salt and cinnamon powder. The cinnamon is to taste, it will depend on how much you like it. Mix well with a whisk. Reserve.
  • Separate the yolk and white. Mix the egg yolk, whole milk and fresh cream (or melted unsalted butter). Mix well.
  • Beat the egg whites. Reserve.
  • Add the liquid over the dry ingredients, stirring well to avoid leaving lumps. Then, add the dough over the beaten egg white and mix to make it uniform.
  • Prepare your sugar and cinnamon mixture, which will give it the characteristic of churros or dumplings. The amount of cinnamon also depends on your taste.
  • In addition to mixing, leave unsalted butter to melt as well. Leave a brush nearby.
  • Use the ready-made dough in your waffle maker and wait for it to be ready. Cooking time will depend on each piece of equipment.
  • Remove from the machine and let it cool slightly to firm up. Then, spread the melted butter over the waffle (on both sides) and then the sugar and cinnamon mixture.
  • Serve immediately and, if desired, with a dulce de leche and maple syrup (just mix the two and heat to make it more fluid).

  • Freeze: If you are not going to consume everything, you can freeze the waffle, but do so without dipping it in butter and sugar. To consume later, I heat it in the toaster.
