I washed and removed the seeds from two large tomatoes and placed them on a baking tray greased with olive oil.
For the filling, a little crumbled gorgonzola, two tablespoons of ricotta cream, salt, black pepper and fresh thyme. I mixed everything and filled the tomato cavities. I sprinkled a little more fresh thyme and olive oil and put it in the oven. Just too good!
